Don't cut until the last possible moment. Keep in fridge after cutting until ready to serve. Squeeze some fresh lemon juice on it after you have opened it up.

I ate my first avocado on a family trip west, I was 11.. My Uncle's family lived in San Jose, and a ranch near Chico, and had produce available from roadside stands the year round. We had strawberries so sweet, they needed nothing to go with or on them, bing cherries dripping sugary juice, avocados that tasted like butter, and plums that were so soft and ripe and juicy, they could have used as is for a jam on bread. I picked lemons and limes and grapefruit ripe right off the tree, tomatoes bright red, and so meaty. This spoiled me for all time for ever liking fruit from the grocery store. Absolutely tasteless, picked green and shipped to the grocery. Yuck. So read up online on how to pick out, and store, and ripen, an avocado, and go buy some tortilla chips and avocadoes, so you can make guacamole dip..We saw the fields of avocados, near Carmel in California. Very interesting.

If you don't want your avocado to taste bitter (by using lemon juice etc) and more like it's true subtle flavor use MILK!

The fat content in milk acts as a coating to stop oxidation (which causes the color change), when I was a chef we preferred milk over lemon juice for flavor reasons. Its just as good a method if not better than using tart lemon juice.

Simply immerse the avocado in full or half fat milk simple as that.

leave the seed in the unused portion or if you have made a dip pop the seed in the dip and take it out just before you serve it. i have never used lemon juice and my guac. never goes black and i always pop any unused potrions back in fridge with skin on and seed popped back in it.

Any sort of citrus will work (lemons/limes)...I have even used beer before in my guacamole when I didn't have a lime. It was tasty and kept it green.
