I'm a lousy cook...so I don't generally make sauces - but simple sauces will do.

2 chicken breasts
1/2 cup of mayonaise
1/2 cup grated parmesan cheese
about 1/2 cup of seasoned bread crumbs

Preheat the oven to 425F
Mix the mayonaise and cheese together in a bowl
Put the chicken breasts on a baking tray, non stick is preferable or lightly grease it if it isn't
Spread the mayonaise/cheese mixture on the chicken breasts
Sprinkle the bread crumbs on the top
Cook for approx 20 mins or until the chicken is cooked

Serve with a side salad or some vegetables

super easy! super yummy!

1 (4 to 5 pound) free-range chicken
Kosher salt and freshly ground black pepper
1 lemon, halved
1 head garlic, halved
1/4 bunch each fresh rosemary, thyme, and parsley
1/4 cup olive oil
11/2 pounds red new potatoes


Preheat the oven to 400 degrees F.
Rinse the chicken with cool water, inside and out, then pat it dry with paper towels. Season the cavity with salt and pepper, and then stuff the lemon, garlic, and herbs inside. Place the chicken, breast-side up, in a roasting pan. Tie the legs of the chicken together with kitchen twine to help hold its shape. Toss the potatoes around the chicken. Season the whole thing with a fair amount of salt and pepper and drizzle with olive oil. Roast the chicken and potatoes for 1 to 1 1/2 hours. Don't forget to baste the chicken with the drippings and rotate the pan every 20 minutes or so to insure a golden crispy skin. The chicken is done when an instant-read thermometer says 165 degrees F when inserted into the thickest part of the thigh (the legs of the chicken should wiggle easily from the sockets too.) Remove the chicken to a platter and let stand for 10 minutes, so the juices settle back into the meat before carving. Serve with the roasted potatoes on the side.

Here is an easy one. Get a bottle of Balsamic Vinegar Dressing. Put some chicken fillets into a baking dish, put the Balsamic Vinegar over the chicken. Bake in oven on 375 degrees for 25-30 minutes. It is excellent with some rice and brocolli. Easy easy dinner and very delicious.

Hi
You can put the chicken pieces in a baking dish and cover with undiluted cream of chicken soup. Cover with foil and bake at 350 for about an hour, or until done.

You can also do the same thing with picante sauce, cover and cook for about an hour, or until done.

I serve with rice, and a green vegetable. Very easy and tastes good, too.

Chicken Casserole
1 whole chicken and 2-3 leg quarters or can use 10 lb. bag of leg quarters
1-16 oz sour cream
2 cans cream of chicken soup
1-1 1/2 sticks of Ritz crackers of I use the WalMart brand Snack Crackers
1 1/2 sticks butter

Directions: Boil chicken and remove from bone.
Mix sour cream and soup together in large bowl.
In a 9 x 13 in baking dish, layer half of chicken and then half of soup mixture, Repeat.
Melt butter. Crush crackers. Mix cracker crumbs and butter together in separate bowl. Stir well. Spread cracker crumb mixture evenly on top of chicken and soup mixture.
Bake in 350 degree oven for 45 minutes to 1 hr or until casserole is bubbly and crackers are golden brown.
Enjoy!! This is my son's favorite dish

Combine 2 Tbsp. chopped herbs with 1/2 cup EVOO-rub about half all over a whole chicken. Place in preheated 425F oven (in pan of course) breast side up for 20 minutes, then decrease heat to 300F and roast another 30-45 minutes depending on size until 165F on meat thermometer. Baste with remaining oil/herb mixture occasionally.
This is really good with some potatoes, carrots and onions cut up and put in pan around bird when you decrease the temperature. I usually use rosemary, thyme, garlic and basil in the oil.

If its chicken breast then try Crispy Parmensan Chicken.

1/3 cup grated parmensan
1/4 cup bread crumbs
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
6 boneless without skin chicken breasts
2 eggs

1)preheat oven at 200F. Mix cheese, crumbs and seasoning in a dish.
2)Whisk eggs and dip breasts into eggs to cot with the cheese mix. Place on a greased oven tray.
3)Bake for 20mins or till cooked.

The "Oven Fried Chicken" recipe on the Bisquik box is quite good and very simple. But no sauce is made with it.

no fry chicken parmesan

4 boneless skinless chicken breast halves
1 egg, beaten
3/4 cup Italian seasoned breadcrumbs
1 (26 ounce) jar light pasta sauce
1 cup shredded mozzarella cheese

Preheat oven to 400 degrees.
Dip chicken in egg, then bread crumbs, coating well.
In 13x9 inch glass baking dish, arrange chicken, bake uncovered 20 minutes.
Pour pasta sauce over chicken: then top with cheese, bake an additional 10 minutes or until chicken is no longer pink.
Serve over hot cooked pasta.

15 minute, no fry chicken enchiladas

1 (28 ounce) can green enchilada sauce (I prefer Macayo's)
2 cans cream of chicken soup
1 cup sour cream
2 cups diced cooked chicken
1 (14 ounce) bag tortilla chips (I prefer "white" corn chips)
8 ounces grated monterey jack cheese or cheddar cheese

lettuce (optional)
tomatoes (optional)
black olives (optional)
chopped green onions (optional)
sour cream (optional)
salsa (etc.) (optional)

Thoroughly mix green chili enchilada sauce, soup, and sour cream in a LARGE bowl.
Stir in diced, cooked chicken.
While still in bag, crush chips into smaller pieces (but don't make them all crumbs) and pour into soup mixture.
Mix well.
Pour into lightly greased 9X13" baking dish.
Top with grated cheese.
Bake at 350-degrees for 25-30 minutes.
When serving, add toppings of your choice.

vegetable cooking spray
2-3 teaspoons olive oil
8-10 skinless chicken thighs
6 shallots, peeled and whole
1/4 cup sweet green peppers, strips
1/4 cup yellow sweet peppers, strips
1/4 cup sweet red peppers, strips
1 head garlic, separated peeled cloves,cut in half
3 tablespoons oyster sauce
3 tablespoons chili sauce
6 tablespoons apple cider vinegar
1 can cut yellow beans, drained
salt and pepper

spray large heavy frypan with veggie spray.
Heat and add olive oil.
Add chicken legs and brown, set aside.
Add to frypan, shallots, all peppers, and garlic cloves, stir and cook until lightly browned.
Add vinegar, oyster sauce and chilli sauce.
Bring to boil, add chicken legs, reduce heat, simmer for 5 minutes.
Season with salt and pepper.
Add yellow beans and simmer for 8 to 10 minutes or until the chicken juices run clear.
Serve hot, alone or with brown rice
