Sarah's Applesauce

Original recipe yield:

READY IN 30 Min

INGREDIENTS
4 apples - peeled, cored and chopped
3/4 cup water
1/4 cup white sugar
1/2 teaspoon ground cinnamon

DIRECTIONS
In a saucepan, combine apples, water, sugar, and cinnamon. Cover, and cook over medium heat for 15 to 20 minutes, or until apples are soft. Allow to cool, then mash with a fork or potato masher.

Crockpot Applesauce

INGREDIENTS:
3 lbs. Granny smith aples
1/2 cup brown sugar
1-1/2 Tbsp. lemon juice
1 tsp. cinnamon

PREPARATION:
Peel, core, and slice the apples. Combine in a 3-4 quart crockpot with the brown sugar and lemon juice. Cover and cook on high for 3-4 hours. Mash with a potato masher into the consistency you want.
Stir in cinnamon and serve warm or cold.

Applesauce Recipe

If you want chunky applesauce, use a potato masher to mash the cooked apples. If you prefer smooth apple sauce, run the cooked apples through a food mill. The key is adding a few strips of lemon peel to the apples while cooking. The lemon heightens the apple flavor.

3 to 4 lbs of peeled, cored, and quartered apples. We use granny smith, fuji, or gravenstein apples, or a combination of all three. (Make sure you use a good cooking apple.)
4 strips of lemon peel - use a vegetable peeler to strip 4 lengths
Juice of one lemon
3 inches of cinnamon stick
1/4 cup of dark brown sugar
up to 1/2 cup of white sugar
1 cup of water
1/2 teaspoon of salt

Put all ingredients into a large pot. Cover. Bring to boil. Lower heat and simmer for 20-30 minutes and remove from heat. Remove cinnamon sticks and lemon peels. Mash with potato masher.
Ready to serve, either hot or refrigerated. Delicious with vanilla ice cream or vanilla yoghurt.

Cinnamon Apple Sauce:

1 cup water
1/4 cup red cinnamon candies
8 large apples, peeled,cored and sliced (tart apples are preferred)
1/2 cup water
1 cup granulated sugar
1/2 cup hot-tamale jelly beans
2 tablespoons fresh lemon juice

1. In a small saucepan, add 1 cup water and cinnamon candies; bring to boil, reduce heat and simmer for about 5 to 6 minutes or until candies are dissolved.
2. In a large saucepan or cooking pot, add apples and the dissolved candy mixture along with the additional 1/2 cup of water.
3. Cook until apples are soft; mash apples.
4. Now add 1 cup sugar, hot-tamale jelly beans and continue to simmer until most of the tamale beans are dissolved, about 10 minutes.
5. Some of the jelly beans will not be dissolved and this is okay, they will be light in color.
6. Serve hot or refrigerate until ready to serve.
7. Serve with ice cream, whipping cream or whipped cream or serve as is.
8. The apple sauce has a vary light touch of a cinnamon"spicy" taste.
9. You may adjust to your taste by adding more cinnamon candies or using less.
10. If you desire to have the sauce spicier, just add a few more cinnamon candies and a small amount of water to a small saucepan and dissolve.
11. Add to applesauce and mix well.

MICROWAVE APPLE SAUCE




INGREDIENTS

2 medium Golden Delicious apples
2 medium Empire apples
2 medium Jonagold or Fuji apples
(Total chopped apples = 6 cups)
1/4 cup water
1 tablespoon Turbinado sugar (if desired)
1/2 teaspoon cinnamon

DIRECTIONS

Core and chop apples into small chunks of uniform size (1/2 inch). Place apples in large microwave-safe bowl. Add 1/4 cup water to bowl. Cover and microwave on high 15 minutes. Stir apples. Continue to microwave, uncovered, until apples are very tender, about 5 minutes longer.

Using potato masher, coarsely mash apples. If skins are too chewy, use a food processor to promote desired texture and break up apple skin. Mix in cinnamon and sugar (if desired).

Makes about 3 1/2 cups.





STOVE TOP APPLE SAUCE




INGREDIENTS

6 cups (6 medium) of McIntosh, Crispin, Jonagold and Cortland apples cut into 3/4-inch pieces
3/4 cup water
1/4 cup Turbinado sugar
2 tablespoons fresh lemon juice
1/2 teaspoon ground cinnamon

DIRECTIONS

Combine apples, 3/4 cup water and sugar in heavy medium saucepan. Bring to boil, stirring occasionally. Reduce heat, cover and simmer until apples are very tender and skins are softened, about 40 minutes.

Uncover and simmer until almost all liquid in saucepan has evaporated, about 10 minutes. Remove from heat. Stir in lemon juice and cinnamon. Cool 30 minutes

Using fork or potato masher, mash apple mixture until coarse and chunky. Serve at room temperature or refrigerate until cold.

Makes about 3 cups.

Put the applesauce in an airtight container and place in the refrigerator to cool. Once cool, top with a little cinnamon if you like, and enjoy a bowl of fresh applesauce!

Applesauce

Applesauce will vary in texture and flavor depending on the variety of apple used. All-purpose apples such as Granny Smith, Rome Beauty, Fuji and Jonagold (as well as many others) produce good results.

8 large apples, peeled, cored and cut into thick slices
1/2 cup water
2 lemon slices
1/2 cup sugar
1/8 teaspoon nutmeg
1/4 teaspoon cinnamon

Combine apples, water and lemon slices in a large saucepan. Simmer, uncovered for 10 minutes or until apples are part sauce and with some chunks of apple left. Watch closely and stir often to prevent burning. Applesauce should be thick; add more water if necessary. Leave sauce chunky or put apples and lemons through a food mill or coarse sieve. Stir in sugar to desired sweetness. Add cinnamon and nutmeg. Serve warm or chilled. Cover and refrigerate leftovers for up to one week. Yield 5 to 6 cups.

To make unsweetened applesauce: omit added sugar and select a naturally sweet variety such as Golden Delicious, Red Delicious or Gala.

To Freeze: Increase spices to twice the indicated amount, as they lose flavor during freezing. Refrigerate until chilled. Pack cool applesauce into rigid freezer containers to within 1/2-inch from the top and seal. Use a container size suitable for your family's needs. To use: thaw in the refrigerator overnight or in cold water for 3 hours. Can be frozen for up to one year at 0°F.

To Can: Pack hot applesauce into clean standard canning jars, leaving 1/2-inch headspace. Seal with 2 piece canning lid and screw band. Process jars for 10 minutes in a boiling water bath. Remove jars, cool, check seals, label and date. Store sealed jars away from sunlight in a cool, dry place for up to one year.
