I had a spinach salad once that had bacon bits, and an oil/vinegarette dressing......it was at someones home...I really enjoyed it but have never found a recipie for it*~ Any suggestions wouldbe appreciated. Thankyou*~

Spinach Salad

INGREDIENTS:

3/4 cup vegetable oil
1/4 cup wine vinegar
2 tablespoons white wine
2 tablespoons soy sauce
1 teaspoon sugar
1 teaspoon dry mustard
1/2 teaspoon curry powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 bunch fresh spinach
1/4 cup chopped purple onion
4 slices bacon, cooked and crumbled
2 hard cooked eggs, chopped
purple onion slices for garnish

PREPARATION:

In a large cup or small mixing bowl, whisk together oil, vinegar, white wine, soy sauce, sugar, dry mustard, curry powder, garlic powder, salt, and pepper. Wash spinach well and tear leaves into bite-size pieces.
Place spinach in a large salad bowl; toss with chopped purple onion. Garnish with onion slices and pour dressing over all. Sprinkle chopped eggs and crumbled bacon over the spinach salad. Spinach salad serves 6.

SPINACH SALAD VINAIGRETTE

1 to 2 bunches fresh spinach, cleaned
1/4 c. (each) real bacon bits, sliced water chestnuts, shredded Swiss cheese
1/2 c. sliced fresh mushrooms
1 hard-boiled egg, grated
1 c. dressing

Toss spinach, mushrooms and chestnuts with dressing; top with bacon bits, cheese and grated egg.

DRESSING:

3 1/2 c. oil
1/2 c. white vinegar
1 1/2 tsp. dry mustard
1/2 clove (minced) garlic
1/4 c. chopped medium onion
1/2 tbsp. salt
1/4 tsp. pepper

Combine at least 1 day before using.

3 bacon strips, diced
1 tablespoon all-purpose flour
1 egg
6 tablespoons water
2 tablespoons vinegar
1 tablespoon sugar
salt and pepper to taste
3 cups torn fresh spinach
1/2 cup seasoned croutons
DIRECTIONS
In a skillet, cook bacon until crisp. Remove bacon to paper towels. Drain, reserving 1 tablespoon drippings. Stir flour into drippings until smooth. In a large bowl, beat egg; add water, vinegar, sugar, salt and pepper. Slowly pour into skillet. Bring to a boil; boil for 2 minutes, stirring constantly. Place spinach in a bowl. Remove dressing from the heat; stir in reserved bacon. Immediately spoon desired amount over spinach; add croutons and toss to coat. Serve warm. Store leftover dressing in the refrigerator for up to 2 days. Before serving, reheat over low heat just until heated through.


Bacon tomato spinach salad
1/2 lb Sliced bacon cooked and diced
1/3 c. Catalina salad dressing
1/2 tsp Prepared mustard
1/4 tsp Salt
1/8 tsp Pepper
8 c. Baby spinach or torn fresh spinach
2 Mediun tomatoes cut into wedges
1/2 c. Cubed feta cheese

Preparation
in a large skillet cook bacon over medium heat until crisp. save 2 tbsp. of drippings. add the salad dressing, mustard salt and pepper to the drippings. cook and stir over medium heat until heated through. In a large salad bowl combine the spinack tomatoes cheese and bacon. drizzle with warm dressing. toss gently to coat.
