cooking will not take out the nutrients per say. Most of the good nutrients are in a vegetables skin so if you can bare to keep the skin on you'll keep a lot of the nutrients.

Boiling the hell out of them destroys most of the value of the vegetable. Sauteing lightly and quickly ion olive oil cold pressed variety usually keeps in most nutrients, as does lightly steaming.
