Preferably things that don't cost much because I can't afford much and eating it plain twice a day gets a little bland.

I love Mac and Cheese and frequently doll it up with some of the following:

1. A little yellow mustard
2. A can of tuna and some frozen peas
3. Kielbasa, grilled
4. Hot Dogs, cut into bite sized pieces
5. Marinara sauce and cheese
6. Bread crumbs and parmesan on top
7. Chopped turkey or chicken
8. Pork chops, browned with onion, put on top and baked
9. Ham, chopped up
10. Canned green chilis and drained black beans, plus a little salsa

Just let your imagination rule!

It is really really good with chopped stop light bell peppers (green, red, yellow). A little chopped onion will help it along too. I like to saute the veggies in butter (light salt and pepper, a little garlic powder) for a couple of minutes before adding them so that they are tender but still a little crunchy.

We get chicken tenderloins from Costco, and saute a single piece, cut it up, and add it to mac&cheese along with some steamed broccoli or (cooked from frozen) peas.

A little garlic or some hot pepper flakes also help change things up...

Or a little bit of cooked ground turkey...

Try dicing some onion and green pepper and adding it. Sun dried tomatoes are also good. Also, if you eat meat try seasoning chicken breast with salt and pepper, and browning it with olive oil. Add the chicken to the mac and cheese.

Thats's a pretty sorry diet! It is good with bacon and pine nuts. Throw some chopped herbs through it, put some bread crumbs on top and put under the grill. Yum.
