Beef will taste ok in this recipe, but not as good as bacon. If you want to make a substitution, find something with a smoky or bacon-like flavor to add to or substitute for the pork. Here are some suggestions:

--non-pork salami
--beef or other non-pork sausage
--turkey bacon or ham

Or just use a more plain sort of meat in the recipe, and add:

--1/4 tsp smoke flavoring (such as liquid smoke)
--1/2 tsp smoked paprika

In any case, with the rather strong-flavored sauce and cheese that tops this quiche, I don't think it is all that important if you use anything at all to substitute for the bacon; in other words, I think you could omit the bacon/meat altogether and make this meatless.

Jeanette has a point about the flavor aspect but you can use your beef, I'll assume you'll use a sliced deli beef, in that case add 1/4tsp more of salt. The reason for the thumbs up on the beef is because looking at the recipe it's a texture thing, the only thing in there is the "meat" to chew, so go with it and enjoy, if you have liquid smoke add 2 drops if so inclined

Try smoked turkey . Some stores have it pre-packaged, usually in 2-4 slices, they look like boneless pork chops. Or get the deli to cut some thick slices of their smoked turkey cold cuts. It will have the smoked flavor, like bacon.

I'm thinking you'd be better off using a smoked turkey leg instead of your beef. The flavor you are looking for is smoky, which bacon has. For lower fat alternatives, smoked turkey leg is great!

I think you might be better off with a turkey sausage. I think you want the added flavor of the sausage. Beef doesn't taste like much.

it really is a rich dish and all you truly want to flow with it really is a salad. i ought to purchase a equipment of mixed eco-friendly salad, cherry tomatoes and one among those little cucumbers for pickling to position in it (peeled and sliced). perhaps some chopped eco-friendly onion too.
