I bought 'summer pudding' from tesco. It said on it 'not to be frozen' - why not? After all it is only bread & fruit, each of which can normally be frozen.

Because when you freeze things the molecular structure is altered by the ice particles upon freezing. Then when the product such as a soft fruit pudding is defrosted, it collapses, and you would just have a soggy mish mash.

Maybe the fruit has already been frozen?

Probably because upon thawing, it will become very watery.
