Hi !!!
Here is what we do with them...I know this recipe is simple, but it is really good...

Blackberry Cobbler

Original recipe yield:
1 - 9x13 inch cobbler

PREP TIME 10 Min
COOK TIME 45 Min
READY IN 55 Min

INGREDIENTS
1/2 cup butter
2 cups self-rising flour
2 cups white sugar
2 cups milk
3 1/2 cups blackberries

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Once oven temperature is reached melt butter in a 9x13 inch baking pan.
In a medium bowl stir together the flour, sugar and milk; batter will be slightly lumpy. Pour mixture on top of melted butter in baking pan. Do not mix butter and mixture together.
Drop blackberries into batter; if more crust is desired add less blackberries. Bake in preheated oven for one hour or until golden brown.

Rinse them gently, pat them softly dry...they are pretty delicate and they burst and bruise easily.

Then eat them raw as a snack, put them on pudding or ice cream, bake them into a pie or a cobbler or crumble or buckle. Blend them into a smoothie or whip or frost.

Mash them into a paste or pure and strain them into a coulis.

freeze them into a slush or a granita.

freeze them whole and use them as ice for lemonade.

stew them a little with onions and serve them with rich beef.

cook them with sugar and make a jam or preserve.

Most of the time though, I wash them quick, and eat the whole container like nature's candy!

Blackberry Smoothie

Ingredients:

1 c. cold milk
1/2 c. fresh or frozen blackberries
1-3 tbsp. sugar
Ice cubes

Directions:

Place in blender, cover, start on puree speed then push blend speed until smooth and ice is dissolved.

Blackberry Muffins

Ingredients:

1/2 c. shortening
1-1/4 c. sugar
2 eggs
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
2 c. fresh or frozen drained blackberries

Directions:

Cream shortening and sugar; add eggs one at a time and blend. Add dry ingredients alternately with milk. Fold in berries. Bake at 350 degrees for 25-30 minutes. Makes 18 muffins.

White Russian Blackberry Cheesecake

Ingredients:

1/2 c. butter or margarine
2 tbsp. Kahlua
2 c. shortbread cookie crumbs
1 c. blackberries
1 to 2 tbsp. sugar
2 to 3 tbsp. Minute tapioca
16 oz. cream cheese, softened
1 c. sugar
3 eggs
1 c. sour cream
1/2 c. whipping cream
1/4 c. Kahlua
3 tbsp. vodka
1/2 c. blackberry Jello
1 tbsp. vodka
1 c. whipped topping
3 tbsp. Kahlua

Directions:

Preheat oven to 350 degrees.

Heat butter in saucepan over medium heat until light brown, stirring constantly. Remove from heat. Stir in 2 tablespoons Kahlua. Add cookie crumbs; mix well. Press onto bottom and halfway up side of greased 10 inch springform pan.

Spread blackberries over crumbs. Sprinkle with 1 to 2 tablespoons sugar and tapioca.

Combine cream cheese and 1 cup sugar in mixer bowl; mix well. Add eggs one at a time, beating well after each addition.

Add sour cream, whipping cream, 1/4 cup Kahlua and 3 tablespoons vodka; mix well. Pour over blackberries.

Place shallow pan half full of hot water on lower rack of oven. Bake cheesecake for 1 hour to 1 hour and 15 minutes or until center is set.

Chill for several hours to overnight. Remove side of pan.

Bring blackberry jelly to a boil in saucepan, stirring frequently. Stir in 1 tablespoon vodka. Drizzle by teaspoonfuls over side of cheesecake. Pour remaining jelly mixture over top of cheesecake, spreading to edge.

Chill until set. Garnish with mixture of whipped topping and 3 tablespoons Kahlua. Makes16 servings.

My Gran has wild blackberries growing all along her road, so we eat them plain, make cobblers, cakes, pies, put them on ice cream. Here's a recipe I got off the 'Zaar in anticipation of blackberry season.

Blackberry Pudding Cake

1 cup sugar, divided
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
1/2 teaspoon vanilla
1 tablespoon butter, melted
1 pint blackberries
3/4 cup boiling water

Preheat oven to 375 degrees F.

Mix flour, 1/2 cup sugar, baking powder and salt in medium bowl.

Stir in milk, vanilla and melted butter.

Spread batter in greased 9 inch deep dish glass pie plate (or 10 x 6 baking dish).

Scatter blackberries over the batter and sprinkle with remaining 1/2 cup sugar.

Pour boiling water over berries, place dish in oven and bake for 25-30 minutes until top is golden brown.

Serve with ice cream or whipped cream, if desired.


You can also make homemade Blackberry Liqueur. Takes a couple weeks, but it is ridiculously simple.

1 cup water
3 cups 80 proof vodka
3 cups white sugar
3 cups ripe blackberries

Shake together the water, vodka and sugar to dissolve sugar.

Gently mix together with the blackberries, taking care not to cut or crush the berries.

Leave to infuse about 10-12 days until the berries have lost most of their color.

Pour thru a fine strainer and discard the berries. (Or eat 'em on ice cream)

Pour into decorative bottles.


Blackberry Dumplings are good, too.

Blackberries Mix

1 quart blackberries, rinsed
1 cup water
1 cup sugar
1/2 teaspoon salt
1/2 teaspoon lemon extract

Dumplings

1 1/2 cups flour
2 teaspoons baking powder
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon nutmeg
2/3 cup milk

Mix berries,water, 1 cup sugar, 1/4 t salt and lemon in large, wide saucepan.

Bring to a boil.

Reduce heat and simmer 5 minutes.

For dumplings: Combine flour,1 T sugar, baking powder, 1/4 t salt, nutmeg and milk.

Stir until mixed.

Drop by TBS into berry mixture.

Cover tightly and simmer 15 minutes.

Serve in bowls with a dollop of whipped cream.

I love to eat blackberries with a little brown sugar and sour cream. It is the best!

Take your index (first) finger and your thumb and gently pick the berry off the vine. Check for bugs, (run it under water if you wish) open your mouth, place the berry on your tongue and close your mouth. Chew it or suck it until it's gone and swallow.

(That's sarcasm just in case no one picked that up) ;)

I like to eat them plain...just rinse and eat! Or they are also good in cobbler or warmed up over ice cream....yum!
