What I do. Normally I just make Vanilla and add what I want for flavor, like Strawberries or Peaches.
I never made Garlic, but, there many options. You could use Powder Garlic like that in a Shaker. You can use Roasted Garlic that have small little pieces. It would be a trial and error to find what taste best and how much to add. I would start with a small amount and work up. A good way to test a reciepe for Ice Cream. You can make up a regular batch. Instead of using an Ice Cream maker divide into as many trial runs you want and add your different types and amounts of garlic. Keep a note on what you do for each. Put into Zip-Lock Sandwich Bags and put this into a Gallon Zip-Lock with your Ice and Salt and work it now and then until ready and test what it taste like. Once you try one then your next batch you know if you want more or less, powder or roasted, etc.
This the best I know to do.

I first started looking for a garlic ice cream recipe right after I saw a special on the Food Network about a town that celebrates garlic once a year with a "garlic day". That was a couple of years ago, but you can probably still catch it if you're interested. :)
Here's the recipe I've been making. Hope you enjoy it! :)
1 1/2 teaspoons unflavored gelatine
1/4 teaspoon salt (or slightly less)
1/4 cup cold water
2 tablespoons lemon juice
2 cups milk
2 garlic cloves, minced
1 cup granulated sugar
2 cups whipping cream
Soften gelatin in water.
Heat the milk just to a simmer, add sugar and salt and stir to dissolve. Dissolve the gelatin in the hot milk.
Cool, then add the lemon juice and garlic.
Chill in freezer until slushy.
Whip the cream until thick but not stiff, and stir into the mixture. Freeze in a mold or foil covered tray.
Top with strawberry fruit toppings, or fresh fruits.

Not a recipe but a recommendation. Go to the Isle of Wight Garlic Festival this year. Garlic Lager, Ice Cream, Garlic Garlic, everthing with garlic. Just don't expect anybody to be your friend on the ferry home. Me and my mate grossed out several people and one entire family.

There maybe sites on the internet - I know that Isle-of-Whight has garlic ice-cream. I am not laughing. Whenever I go to Riga, Latvia I always go to the Kiplokbars (garlic bar) where you can sample anything with garlic including beer, wine, ice-cream and obviously food at degrees of strength of your choice! Unfortuneately I do not get there enough! Also I cannot have the ice-cream or the booze.
I can confirm that there are many recipes on line just type in address bar garlic ice cream recipe! I am going back there in a minute to have a look myself!!! There is a savoury one there!!!!!!!!!!!!!!!

A little garlic adds good flavor to a dish -- with the emphasis on "little". My wife, the health nut, presumes that garlic is the end all
and puts whole cloves in dishes. I used to like a little garlic in my dishes. Now I can't stomach it. I can't fathom garlic ice cream. Quite revolting.
