Greek Salad
2 Cups Field Greens or Romaine Lettuce
1/4-1/2 Cups Red Onion, sliced anyway you like it
1/2-1 Small Tomato, sliced
1/4-1/2 Cups Kalmata Olives
Feta Cheese (You can add it, but I personally dont like it)
Dressing-
3-4 Tablespoons Lemon Juice (Fresh squeezed)
5 Tablespoons Olive Oil
A little but of miced garlic
Salt and pepper to taste
Mix all dressing ingredients together. Then mix all salad ingredients and sprinkle desired amount of salad dressing over salad. Enjoy!

Mediterranian Bean Salad
1 Can Kidney Beans
1/3 Cup Chopped Parsley
1/3 Cup Diced Red Onion
1-2 Stalks Celery, Chopped
1/2 of a Red or Green Pepper
5 Tablespoons Olive Oil
3-4 Tablespoons Red Wine Vinegar
Salt and Pepper to taste.
Mix all ingredients in a bowl. Serve and Enjoy!

Simple Italian Pasta Salad
1 (16 ounce) package rotini pasta
1 cup Italian-style salad dressing
1 red bell pepper, diced
1 green bell pepper, chopped
1 red onion, diced
In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
In a large bowl, combine the pasta, Italian salad dressing, , red bell pepper, green bell pepper and red onion. Mix well and serve chilled or at room temperature.

Asian Salad
2 (3 ounce) packages ramen noodles, crushed
1 cup blanched slivered almonds
2 teaspoons sesame seeds
1/2 cup butter, melted
1 head napa cabbage, shredded
1 bunch green onions, chopped
3/4 cup vegetable oil
1/4 cup distilled white vinegar
1/2 cup white sugar
2 tablespoons soy sauce
In a medium skillet over low heat brown ramen noodles, almonds, and sesame seeds with melted butter or margarine. Once browned, take off heat and cool.
In a small saucepan bring vegetable oil, sugar, and vinegar to boil for 1 minute. Cool. Add soy sauce.
In a large bowl , combine shredded napa cabbage and chopped green onions. Add the noodle and soy sauce mixture. Toss to coat. Serve.

Couscous Salad
5 oz. couscous
3-4 cups water, boiling
3/4 cup chickpeas
1 red bell pepper, roasted, peeled, and chopped
1/3 cup black olives, pitted
1/3 cup onions, chopped
3 Tbsp. fresh mint, chopped
3 Tbsp. olive oil
2 Tbsp. lemon juice
Salt, to taste
Pepper, freshly ground
5-6 lettuce leaves
5-6 fresh mint leaves
Add the couscous to the boiling water. Cover and let stand for 2 minutes. Drain the excess water in the strainer and place into a dish. Add the chickpeas, bell pepper, olives, onions, and mint. Toss the ingredients with the olive oil and lemon juice and season with salt and pepper.
Lay the lettuce leaves in a serving dish and pile the salad over the bed of leaves.
To garnish, make a flower in the center with the mint leaves.
Refrigerate until ready to serve.

This is my healthiest one. It's a spinach-orzo salad.
1 cup orzo
1/2 bag of fresh spinach, chopped
1/4 cup toasted pine nuts
1 bunch green onions, chopped
Boil off the orzo, drain, and toss with lemon vinaigrette.
1/3 cup olive oil
Juice of 2 lemons
Zest of half a lemon
Spoonful of garlic
Oregano, salt and pepper
Toss all that together. You can add more veggies if you want, sun-dried tomatoes (not oil-packed) and black olives are good. I like a little feta on top. It makes a huge batch, so don't be scared of the olive oil or feta.

My friend makes a great salad w/spring greens, toasted pine nuts, mandarin orange slices and sometimes dried cranberries, and tosses it all lightly w/poppyseed dressing. Not sure tho about the calorie count. But, boy, is it yummy:)

as long as you add fresh good vegetables, you wont need to drown it with dressing which is fatening since the veggies will give all the taste. One of my fast and simple recipes for salad include rocket (arugula), tomatoes, fennel, carrots all slcied thin. To slice carrots super thin, I use a potato peeler as the sliver. I then add dried figs (icut them up), with a dressing of lemon and olive oil and pinch of salt. It tastes great and fresh, I think youll love it.
