This year I heard you are able to mail it until monday since the last day of taxes ends on Sunday, is true? And if not what can happend if they are not mailed out by then?

Yes, the deadline is actually Tuesday this year. If it's not mailed by then, if you owe you can end up paying a little extra; if you have a refund coming, nothing will happen.
