Breakfast Fried Potato Patties
INGREDIENTS:
8 potatoes, boiled and mashed
1 cup flour
Egg replacer for 1 1/2 eggs
salt to taste
oil for frying
PREPARATION:
Mix the potatoes, flour, egg replacer and salt. Turn the mixture onto a floured bread board or countertop and knead into a dough, adding more flour if necessary until the dough is no longer sticky.
Roll the dough out to a 3/4 inch thickness, then cut into rounds (a drinking glass works well for this).

Lightly oil a frying pan or griddle and fry the rounds until browned on both sides, about 10 minutes. Serve with Applesauce.

Easy Breakfast Burrito Recipe
INGREDIENTS:
2 potatoes, chopped
1/2 onion, diced
2 cloves garlic, minced
2 tbsp olive oil
1 cup vegetarian beef substitue (try Soyrizo)
salt and pepper to taste
grated cheese (optional)
flour tortillas, warmed
PREPARATION:
Sautee the potatoes, onions and garlis in the oil over medium heat until potatoes are almost soft. Add the beef substitute, salt and pepper and continue cooking until potatoes are tender and the beef substitute is heated through.
Place about 1/3 cup of the potato and mock meat mixture on a warmed flour tortilla. Top with cheese if desired and wrap up. Serve with sour cream.

You have gotten some good answers but I wanted to point out that there is nothing intrinsically unhealthy about bread-especially whole grain bread (BTW, don't be fooled if it calls itself "wheat" bread-look for whole wheat or a mix of whole wheat and other grains). Try the lower fat cream cheese and the spreads made only with fruit and fruit juice (like Polaner) to keep it healthy. Whole grain cereals are also good-but I'd be leery of the fried potato patties.

1. Instead of having a bowl of cereal with fruit on it(which is still good for you) go even healtheir and have a bowl of fresh fruit with cereal on it! (I use strawberries, bananas, raspberries, pineapples, apples, kiwis, blueberries, peaches basically anything!)

2.Eggs made any way(scrambled, sunny side up etc.) Eggs are super nutritous and they have tons of protein which keeps you full longer. Using eggs whites are lower calorie than using the full egg.

3.Make yourself a yogourt parfait! I take my favourite yogourt, cut up some fruit and mix it all around and then i sprinkle some oats on top!

The good old egg will do the trick. It's plenty filling and tasty, especially when you add cheese, veggies, and turkey meat for an omelette. Also, organic cereal.

Morning Star makes good breakfast products which are vegetarian! I heard that their sausage was good. Eggs are decent, but are high in cholesterol..Egg whites may be a good option, though if you are vegetarian, you may not eat eggs.
