There is no such thing as infinite time and evolution. Given enough time, the whole universe will collapse and reborn again into another universe, then everything will start from scratch, again.
(Well, at least this is what is mentioned in some buddhist scripture which I happen to read, nothing added, nothing deleted, everything is transferred to another and transfer back. It might not be the truth, but then, I am not going to live that long to find out :D)

First, can you define 'Time'. Second, are you defining 'Evolution' as changing certain major life processes to continue procreating/duplicating your species? Like Carbon Based Life Form or Silicon Based Life Form? or is 'Evolution' just a 'small/minor process', a 'glitch', a stumbling rock through reality? 'Theory' can be the Philosophy of Possible Survival of the Species or just Luck, or is 'Random Choas' a Reality called 'Evolution'? Time is a distance in reality, a machine that graduates between two points, a thought, no real existance, What is Time? 'Infinate' requires a distance between two points and a 'thought' that Reality does Exist between the two points. It's rather simple.

I like the idea and it is worth dwelling upon as a hypothesis
BUT
we don't have that time.
Either
a huge asteroid will hit us and wipe out just about everything, allowing whatever survives to be the dominant species
Or
Eventually the sun will expand sufficiently to wipe everything out totally - everything - before consuming the planet.
Or,
as is possible, mankind will wipe itself out through mismanagement of the environment.
Plant Of The Apes? But without the power of speech ...
In response to the suggestion that evolution will not continue - it already is.
If undisturbed by disaster as described, I would hope that:
All mankind will breed so that we are all the same colour.
Mankind will control its stupidity regarding fuel sources, environment destruction and continued belief in gods. Religion will fade away, slowly at first (as is happening NOW) and gaining speed as mankind realises the silliness of it all.

The Universe will keep expanding, the sun will continue its life cycle and eventually become a red giant which will pretty much make the earth unliveable (in about five billion years or so), during that five billion years, humans will become extinct but there will be other creatures possibly humans again that will evolve and allow a new start (quite a few new starts) actually.

That would depend on many factors. The earth is supposed to gradually heat up as the sun ages. They say in about a billion years, the average day will be 160 degrees F. so life might evolve to adapt to the heat.

with aninfinite amount of time, the sun would explode, taking this galaxy with it. So hopefully we'd be somewhere else by then. If not, bye-bye earth-based life.
As far as humans go, we'll figure out how to blend ourselves with machines, master nanotechnology and other mysteries of life and become immortal, maybe choosing someday to get "unplugged" or sent forever into space. Utopia. It'll be pretty cool.

There are any number of things that could happen that would be equally valid as an ultimate result... Evolution is meaningless outside of a context of environment.

Medical science may advance so far that evolution may become extinct. Or a disaster may befall humanity causing humans to become extinct, giving rise to a whole new top-dog species. It happened before.

We will expand our society beyond our planet. Meaning that some of us will leave earth and go to other planets. This way if somethig tragic happens on Earth, there will still be humans in other parts of the universe.
Then, we would probably evolve to be able to survive in those new planets.
