Glad you asked because we just had it yesterday.
It's called Sweet and Savory Ribs.
1 Lg Onion, sliced and separated into rings
2-1/2 to 3 # boneless country-style pork ribs
1 bottle (18 oz.) honey barbecue sauce
1/3 cup maple syrup
1/4 cup spicy brown mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Place the onion in a 5 qt. slow cooker. Top with the ribs. Combine the Barbecue sauce, syrup, mustard, salt, and pepper; pour over ribs. Cover and cook on low for 8-9 hours or until the meat is tender. Yield: 6-8 servings.

Some cookers cook hotter than others so start checking it for doneness at 6 hours.

Found a lot of gr8 recipes in here for crock pots.

Basically follow the general advise of what the other people have said here -- except for this:

Add a can of Dr Pepper soda in lieu of some of the water. Yes, don't be shocked. The carbonation helps break down the meat and get it more tender. And the flavor of Dr. Pepper is closer to BBQ than any other carbonated beverage. You won't be tasting Dr Pepper when you eat the ribs, but you'll have a hint of something different. A tiny bit sweet -- as most BBQ sauces are a tiny bit sweet anyway.

My friend swears by a 7-up for their thanksgiving turkey. Even I haven't tried that yet -- but I promise this works great on pork ribs.

Yum yum!

Place in crock pot with enough water to cover. Cook until tender. Finish in the oven or on a grill basted with Bar-B-Que sauce.
