Don't overbeat once you add the flour; this develops gluten and you don't want bread, you want tender cookies!

Make sure your measurements are precise. Do not pack scoops; fluff flour and sugar slightly, scoop, then level top w/ straight edge.

Use correct size eggas (if specified in recipe).

Store airtight, in freezer.

You may increase moisture content by substituting honey for the granulated sugar.

"Sponginess" is a problem I haven't run into. Don't overbeat the dough. Just beat enough to incorporate the ingredients and chill dough before rolling out.

once you put them in a container lay a slice of apple in with it this keeps them from drying out
