Can I substitute a 9x13x2 inch pan? How do I compensate for the different dimensions and the slightly different volume?

Just use a 9x13" and bake a little longer. Usually those bigger pans are Pyrex glass ones. I have one I got at an estate sale; never seen them for sale new, come to think of it.....

A 10 x 15 x 1" pan is called a jelly roll pan. I have three which I frequently use. Try stores on the internet. I would not try to substitute the 9 x 13" pan. However, it depends on what you are making. If you are placing rolls or cookies on pan it wouldn't matter but you probably would need another pan.

Jelly roll pans can be got at any department or discount store. DON'T substitute pans if you want a recipe to work out!

That is just a cookie sheet which you use for making cookies or sheet-cakes. (The ones with 4 full sides of course). I am sure you already have one, if not two. :)
