Hi !!!
Here is my answer...Yes, if you must, but brown sugar is soooooooooooo good for baking...

Demerara sugar and turbinado sugar, which are both dry and coarse-textured, and Barbados sugar, which is moist and fine-textured, can certainly be acceptable substitutes for brown sugar.

---------I ALSO CAME ACROSS THIS...

Brown Sugar Substitute:

For each 1 cup firmly packed light brown sugar called for in a recipe, use 1 1/2 tablespoons molasses plus 1 cup granulated sugar.

To make light brown sugar from dark brown sugar, use 1/2 cup firmly packed dark brown sugar and 1/2 cup granulated sugar.

For dark brown sugar, use 1 cup firmly packed light brown sugar plus 1 tablespoon molasses; or 1 cup granulated sugar plus 1/4 cup molasses.

Brown sugar is white sugar and molasses combined; it is not, as many people think, a less refined version of sugar. Or at least, it is not anymore. So if you're objecting to the molasses in brown sugar and its easy-to-make substitute, what does that leave?

If it is the molasses that you resent, you can simply use white sugar in place of brown. But pure white sugar essentially has no flavor other than sweetness, so if you use it in place of brown sugar, what you're making will have less — and possibly significantly less — flavor. Brown sugar also adds more moisture to a dish than white, so, depending on what you're making, the result may also be drier.

Yes, it will most likely taste wierd. Brown sugar is white sugar with molasses....basically a less refined sugar. You can substitute white for brown with some small taste differences but not the other way around.

Molasses and white sugar. 2 Tbsp molasses + 1 cup white sugar per cup of brown. In a pinch you can use white, but it won't taste quite the same.
