Per the January through April 2007 NADA Classic, Collectible, and Special Interest Car Appraisal Guide, it lists the following information:
Mustang II Mach I 3 Door Fastback
MSRP: $4,523
Value Range
Low: $2,125
Med: $4,900
High: $8,150
What kind of engine (cubic inches and horsepower) does it have? I can give you percentages to increase the value by depending on the engine.
Also, if it has A/C, add 10%
If it has a Mustang Cobra II package, add 35%
If it has a Mustang King Cobra package, add 45%.

I just sold a 78 King Cobra for $3k, so use that for a ballpark figure.

What exactly is "excellent restorable condition"? I suspect it means it's got every chance of being restored with loads of money thrown at it. I'd say $2500 tops.

Not sure, but I think my grandma had one of those with a vinyl top. It was a total grandma car for sure.

$4500-6000 if it has a 5.0 Liter V8 underneath the hood.
