I was at one of my favorite vegetarian restaurants and their apple juice was freshly squeezed and sooo good! Much better than when you buy it in stores. How would I go about making this at home?

You would have to get a juicer. The fresh apple juice IS delsih, isn't it? The beautiful thing is that you can drink tons of it and it won't rot your teeth or give you the trots like the store-bought kind.
I would NOT recommend that you put it in a blender. That will not extract the juice.
Cheers!

You have to get a juicer, like Juicman Jr. You cut up the apple and put it in the juicer. Out comes juice in your cup and out goes pulp into the waste container. Maybe you could put the apple in a blender and then strain it but apple juice turns brown very quickly if it left out for a while.
