You can eat anytime you want - 100 calories at 9 AM is the same as 100 calories at midnight. The whole "don't eat at night because it turns into fat" thing is a myth. The main reason it's recommended that people don't eat at night is because people are more likely to pig out on junk food instead of healthy food.

most sources I've looked at say to stop eating 2 hours before bed so that your body isn't digesting the food during sleep

there is nothing wrong with eating late at night it's just a matter of what is being consumed and in what quantity.

since for most night time is when the level of activity is at it's lowest then carbohydrates beyond what is found in vegetables are not needed. easily digestible protein sources like eggs, fish, cottage cheese and protein supplements are optimum for night time use.

I always heard that you should never eat more than 3 hours before you go to sleep.
