salami is in the same category as bologna. Even if you get the low fat kind, it still has lots of the unhealthy fats in it.....but ain't it gooood!!!

The white fatty particles are fat and gristle. Salami is another one of those foods that poor people had to invent to make the scraps and offal they were allowed to have taste better and keep longer. Then rich people go, "Hey! That tastes pretty good!" and it becomes a mainstream food item.
Salami is made from fat, gristle, organ meats, maybe some red meat scraps, and herbs and salt for preservatives.
So, salami is tasty (if you don't think too much about it), but you should probably only eat it for an occasional treat. The all-salami every-day diet would probably hasten your demise by several years.

IS salami unhealthy?
Well, it's not a vegetable, certainly. But there are many worse things you could be eating. Those white things you see are pieces of fat as salami is made from other things. The fat is what helps to give it flavor.

The plus to me is that salami is low carb, even though the fat can be is an issue. I can't resist it.

Luncheon meat is high in fat and salt.........None of them are really healthy. I think you have to get turkey or chicken based luncheon meat (ie turkey salami). There also are "low salt" luncheon meat.
