You know what it means when nobody's talking at the dinner table
Serve with a bowl of Buttered Linguine noodle in the center of the table. Don't forget the French Bread
Chicken Marco Polo

Ingredients:
4 boneless chicken breasts
1 cup flour
2 tbsp oil
6 slices of prosciutto
6 stalks of asparagus, cooked
6 slices of mozzarella cheese
4 tbsp butter
2 minced shallots
1 cup sliced shittake mushrooms
2 cups veloute sauce*
1/2 cup Madeira wine
2 tbsp chopped parsley

Prep:
Heat oven to 350 degrees.

Dredge the chicken in flour and saute in skillet with oil until golden brown on both sides.

Place the prosciutto and asparagus on top of the chicken and cover with mozzarella. Place in oven to warm and melt the cheese.

Meanwhile, saute shallots and mushrooms in melted butter until tender. Warm veloute sauce and add wine.

To serve, remove chicken from oven and place on plate. Surround with shallots and mushrooms. Cover with veloute sauce and sprinkle with parsley.

*To make veloute sauce, melt 2 tbsp butter in a saucepan and stir in 2 tbsp of flour. Cook, stirring for several minutes to cook flour (do not brown). Whisk in 1 cup chicken stock and stir until thickened.

FLANK STEAK, SHALLOTS & VINEGAR :
1 big flank steak (or skirt steak)
tons of sliced shallots
1 1/2 glass of vinegar
butter
salt & pepper

In a pan, put some butter, then when melted, add the shallots, a little salt & pepper and
when golden, take them out and put the steak in the pan, salt & pepper again.
Cook on medium heat. When golden on both size, add the shallots and the vinegar and
let it reduced a little. When you have an homogeneous sauce, it's done.
Serve with a gratin, boiled potatoes, or fresh pasta


CAULIFLOWER GRATIN :
Clean and boil the cauliflower for about 8 minutes.

On the side, make a sauce like this : 30 grams of flour
30 grams of butter
salt & pepper
a touch of nutmeg
1/2 liter of whole milk

In a pot, melt the butter, add the flour and when golden a little,
add the milk, salt, pepper and nutmeg.
With a wisk, mix it all. Then use a wooden spoon until the sauce is thick.
It takes a little while, but don't stop stiring.
Put a little of the sauce in the an long oven dish to cover the bottom,
then the cauliflower and pour the rest of the sauce all over.
Add the shredded gruyère on top (trust me, this cheese is the best
if you need melted cheese, and you can find it in every supermarkets),
put in the oven until
the cheese is golden, checking on the cauliflower, it can't be too cooked.

You can do the same gratin with :
-Big macaroni (again boil the pasta first, just that when keeping
on cooking in the oven they won't be over cooked, put in oven dish, pour sauce,
gruyère on top, oven at 380°)
-Leeks

I'm glad I don't eat at some people's homes.

Tonight:
Wilted spinach salad with bacon and homemade croutons
Sweet onion soup with parmesan crostini
That's all. Just a light supper.

Soup recipe:
4 large onions, peeled and thinly sliced
2 T sugar
1 T course sea salt
enough olive oil to coat bottom of med/large soup pot.
4 C canned beef stock (if using homeade, adjust seasonings)
1 large bay leaf

Sautee onions in oil, sugar and salt until very brown,(caremlized) (not burned), add beef stock and bay leaf, simmer 20 min., or more.

Slice french or italian bread, toast under broiler until brown turn and toast again, put grated parmesan cheese on toasted bread, broil again until cheese is bubbly and browed,

Serve soup with the cheese bread floating in the middle.

Slow cooked honey garlic ribs with some homefries. I haven't tried these recipes, but they got some good reviews.

Honey Garlic Ribs
INGREDIENTS
4 pounds pork spareribs
1/2 cup honey
1/4 cup soy sauce
1/4 cup distilled white vinegar
2 cloves garlic, minced
2 tablespoons brown sugar
1 teaspoon baking soda
1 teaspoon garlic salt
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Slice the ribs into individual pieces. In a large bowl, combine the honey, soy sauce, vinegar, garlic and brown sugar. Stir until honey and sugar are completely dissolved, then stir in the baking soda. The mixture will begin to foam. Transfer ribs to the bowl, and turn to coat.
Cover a cookie sheet with foil, and arrange the ribs meat side up on the sheet. Pour excess sauce over all, and sprinkle with the garlic salt.
Bake for 1 hour, turning every 20 minutes.


Home Fries
INGREDIENTS
3 medium russet potatoes, cubed
3 tablespoons butter or margarine
salt and pepper to taste
DIRECTIONS
Rinse potato cubes with cold water, and drain well. Melt butter or margarine in a large skillet over medium heat. Place potatoes in the skillet, and stir to coat with butter. Season with salt and pepper. Cover with a lid, and cook for 10 minutes. Remove the lid, and cook for another 10 minutes, turning frequently until brown and crisp on all sides..

I am browning chicken breasts on my George Forman grill, throw some deli ham slices and half a slice of swiss cheese (then nuclearwave to warm the ham and melt the cheese) to make quick and easy Cordon Bleu without all that needless breading and fat...adding Broccoli Normandy (broccoli, cauliflower, and carrots) with a dash of Mrs. Dash and mashed potatoes (with the peels left on) cooked in chicken broth rather than water to add flavor and some dried chives to add flavor and color..also very little fat...my family loves this stuff! :)

One of the oldest and best recipes I know was the first thing I learned to cook for myself.

Baked bbq steak

Steak (chuck, round, top sirloin}
1 onion sliced
1 bottle barbecue sauce

Preheat oven 350 degrees. In baking dish, Put onion on steak, top with onion, and pour sauce over steak and onions.
Bake 30 min.

Fast & easy: get chicken strips that you just pop in the oven and bake. Make instant mashed potatos, a pack of brown and serve rolls, and serve the chicken with thousand island dressing to dip in! It is delicious and you dont have to slave over the stove all day. I even make the mashed potatoes in the microwave, they are just as good! Good luck!
