and does anyone know what is the best mozzarella-buffalo?
and what texture should mozzarella be,smooth?I had one from tesco and it was rough.

Buffalo is the best. My fave cheese of the moment is white Stilton with apricots - highly addictive and melts in the mouth. Try it!

I like Gorgonzola and Dolcelatte which are Italian blue cheeses. And Parmesan for pasta of course. But it's a difficult choice because the number of cheeses is too vast and I don't know them all. The French for instance say that they have one cheese for each day of the year and it's true. They make two Pont l'Eveque and Petit Munster that I like very much though you may not like them because they are quite strong. And then of course there are British cheeses that are very delicious too and are getting more and more delicious with the new development and proliferation of organic farming and creation of new organic farms products among which are cheeses. The best mozzarella is from buffalo milk and the very best of the Buffalo mozzarella is made in a region near Rome called Ciociaria. Cow's milk mozzarella is an invention of the mass production industry a bit like the mass produced balsamic vinegar. It can be acceptably good though but it shouild be very smooth. It's better to buy mozzarella directly from Italian food shops or from slightly upmarket shops and supermakets such as Waitrose or Marks & Spencer

My favourite cheese is Ossau Iraty from France but you can buy it in any major supermarket. As for buffalo mozzarella, I don't know which one is the best and yes it is best if it is smooth.

I love all cheese and all dairy but personally I love cheddar the best. I could eat a big hunk of sharp cheddar cheese and be happy as I wanna be

Brie de Meaux - for just enjoying it with bread or biscuits or with fig jam or with fresh figs
Gorgonzola
Gruyere - for french onion soup or making Quiche
Mascarpone - for tiramisu - baking - or mixing it with fresh cream as frosting for cakes, it makes the fresh cream thicker and richer!
Camembert - deep fried with batter and serve with strawberry jam or blueberry jam
Mozzarella - I like it for Pizza Margherita, or for Pasta dishes

I don't have just one favourite but
Cheddar - mature, very versatile
Parmesan - a must for pasta and pizza
Brie - lovely with French baton
Stilton - occasional treat

I love any Cheese but i think my favourites are Stilton , Black Bomber and Colliers Cheese
