I rode cross country on my own and had to find maps. I started with state maps from AAA and the state tourist agencies and, when possible, got more detailed county maps in order to find back roads away from heavy traffic. noise and polluting vehicles.
There isn't any overall nationwide site that I know of, but many states now have cycling maps that are available through their transportation or tourist departments.

Here are a couple of sites that provide links:

Unfortunately, there is not a bike navigation site like mapquest. There are a lot of bike advocacy groups that do offer resources for finding bike friendly routes though. Additionally, try to contact the Rails-to-Trail Conservancy. They are sponsors of trail construction and probably have some good maps and listings.

It might not be possible to go the whole way on bike trails.

I'd go to one or both of these sites, pick the region where you're riding, and post a question asking for good directions. Make sure you post your start and finish points.

Salt Creek starts at 26th just West of 1st Ave in Riverside and goes on for about 20-25 miles...it's really nice! You'll definitely see plenty of deer, ducks, raccoons, turtles, etc. It's very secluded and nicely paved. I like it.
