I mean I understand that they don't stay all the time, but why do my muscles completely go away when i stop lifting?

Everyone's physiology is different. As a general rule, a muscle begins to atrophy about 72 hours after it was last worked out.

they don't. when you stop lifting for whatever reason insulin sensitivity decreases in the muscle cell so nutrient uptake is decreased. less glucose is stored in the muscle cell so the muscle will be less full and look flat.

your muscles grow to accomadate the weight that you are lifting and the stress they are under. After you stop lifting weights and they feel like they are not "under attack" anymore, they shrink back down to normal size.

They're not being contracted anymore so they just deflate. When you put them to work, they build up again. It's not hard to understand.

your muscles are not storing as much glycogen in them
