We fix whole talapia on the grill. Season to taste and spray with butter Pam. Get the skin real crispy.
You can bake talapia fillets in a sprayed baking dish also. If you pour a little milk in the dish, just enough to coat the dish, it is also good. Season, bake at 400' till the flesh flakes.

BAKED TILAPIA
1/4 c. celery
1/4 c. onion, chopped
1/4 c. sweet red pepper, chopped
3 tbsp. butter
3 tbsp. flour
Salt and pepper to taste
1/2 tsp. dried tarragon
1/2 tsp. dried basil
1 1/4 c. milk
1 c. Mozzarella cheese, shredded
1 1/2 lbs. Rain Forest Tilapia fillets
In a medium skillet, saute the celery, onions and sweet red pepper in butter until tender. Add the salt, pepper, tarragon, basil and milk; mix well. Cook for 1 minute, stirring constantly until thickened. Add the cheese and stir until melted. Do not boil. Rinse the Tilapia fillets in cold water and drain thoroughly. Place the fish in a 12 x 8 x 2 inch baking dish; spoon the sauce evenly over the fish. Bake at 425 degrees for 8 to 10 minutes, or until the fish flakes evenly when tested with a fork. Serves 4.

Tomato-Basil Tilapia
Ingredients:
4 Scallions chopped fine(just the white part)
1 Tbsp Minced garlic
1 Tbsp Olive oil
1-cup diced tomatoes
8 Fresh basil leaves sliced
Salt, pepper & a tiny dash of Tabasco
3 to 4 tilapia fillets, cubed
8 oz Spaghetti cooked
Parmesan cheese
Directions:
Boil water and start the pasta cooking.
Sauté chopped scallion and garlic in olive oil until translucent. Add tomatoes, basil, Tabasco & salt & pepper to taste and let cook for about 5 minutes until it all becomes a wonderful sauce.
After 7 or 8 minutes the pasta should be ready so drain it & set aside.
Add fish cubes to tomato-basil sauce and simmer on low until tender, maybe 6 or 7 minutes. Makes 4 servings.

There are so many ways to cook fish filets... most simple. Talapia is a little thicker than some filets so you can also broil it... just a few minutes on each side. Melt some butter (or your oil of choice), squeeze in some fresh lemon, season top of fish maybe with some herbs of choice, and brush on the butter mixture.
OR
moisten fish and dip in a mixture of flour & breadcrumbs, or just flour. You can season that mixture if you like. Then fry in a little bit of canola or olive oil (healthy choices). Deep frying isn't necessary. Fry on med-high heat till nice and browned on both sides, drain on paper towel and serve with tarter sauce (mayo. and sw. relish) and lemon wedges. I sometimes use almond flour to dip my talapia in for a healthier choice. When looking for a recipe, I often just Google, and find many. But these suggestions are simple.

Talapia is easy to fix. Pop it in a skillet sprayed with pan spray. Medium heat 4 minutes each side top it with either cajun seasonings or lemon pepper when it comes off. Nothing to it.
