the third pin acts as an earth cable. But within the 2 pin plug, there are only 2 wires, replacing it with a 3 pin plug, does not make it into 3 wires. so its kinda redundant.

So long as the original 2 pin was not an adapter you'll be grand. otherwise just stick a screwdriver into the earth and then you'll b able to put in your 2 pin.

No -- the three pin plug obviously has three wires in it. You would not be able to convert one to the other without other modifications. Buy the proper equipment for the job.

Don't modify something like that ever.
Do not ever cut off a plug and wire up another one unless you are a licencened electrician which you clearly are not.

All your adding is a ground. If there is no ground wire in the line, then nothing is achieved.
