I'm not going to neuter a dog to actually stop 'humping', but for curiosity's sake I'm just curious as to whether or not I will have to watch my legs all the time.

I should have said will it stop the 'mounting'. That's a nicer way of putting it.

A dog that is exhibiting inappropriate sexual behavior is not doing it because he is seeking to mate. He is doing it as a sign of disrespect and dominance over you. For this you want to get him some Basic Obedience lessons to re-establish your position as leader in your household.
The neutering will prevent him from running off at the slightest scent of a female in heat. Remember, if the wind is right your male dog can pick up and go after the scent of the female no matter how many miles away she is. Many male dogs get lost this way.

It might do if the mounting behaviour is actually sexually orientated - sometimes though it is an expression of dominance. If this is the case, castration won't stop it, training to make him more subordinate to you will though

Behavioural modification is not the number one reason for neutering a dog. Neither is keeping down the dog population, though this is a good reason. The main reason for doing it is for your dog's health - males are very prone to prostate cancer when they're older, so please do it to help him live a longer and happier life.

Neutering will provide many health benefits. So have it done.

But it will likely not stop him mounting your legs. This is not a sexual behavior. This like him slapping you in the face and saying Look here, I'm the boss.

Have him neutered, and enroll in some obedience classes asap.

It depends on the age of the dog.If its an older dog that's already mated than no,he will still mount, because he knows what its for.
