Many people rip out the inside of a loaf of pannini. When I asked someone WHY they did it, this was the reason given. Personally, i think bread is bread whether it is baked crisp or its the soft inside. And removing the inside part only lowers total calories of THAT piece of bread because you are eating less... nothing more. Am I right or wrong?

The crust forms from the heat of baking. It does not have less gluten or fat. The only way it might have more fat is if the bread was brushed with butter after baking (this is a common bread baking technique).

You are correct. The crust of the bread is the same dough as the inside. So all nutrients are the same.
