Does anyone know how long until they stop making this shelby until they start making them again? Do you think it could be anywhere from the years 2011-2025?

As long as Ford builds Mustangs, they will build performance models. The GT500 was intentionally released 2 years after the new body style came out to spark sales. It is a trend with all Mustangs. The first two years of production, the cars sell fast. Then the sales slow down, and Ford releases a performance model to boost sales. It is a formula that works every time. Sure, Ford will only build 5,000 GT500's a year, but the very existance of the GT500 advertises the GT and LX models. Who knows if they will build GT500's in 2011, but I am sure there will be some high performance model.

By then, Carroll Shelby will be dead and Ford will find another whore whose name they can use.
Additionally, the T-bird was discontinued not because it was part of a three-year cycle to create exclusivity, but because they miscalculated the demand of the vehicle, among other things. Those "other things" include not having much hp, being unrefined, and the discontinuation of the car it was based on, the Lincoln LS. Of course, Ford pulled a GM and got it right just before they killed it.

I think its a 2-year production, maybe 3 so after 2008 or 2009 will be the last GT500 in this body style anyway.
2011+ is a little harder to speculate, those products are still in concept.

If pigs can fly, then yes. If not, there is no chance. The GT500 Eleanor is fast compared to cars in the 60's and 70's, but slow compared to the sports cars of today. A new regular Ford Mustang GT should be faster and handle better than the 67 Shelby GT500.

They probably will limit the production just to preserve the value of the car and make it a collectable. Ford does a lot of three year runs and then stop. Like the T-Bird.
