It could be the baking soda.. or maybe your just not letting them cook long enough.. you may need to use baking powder if the recipe calls for it.. when making chocolate chip if you add vanilla pudding in with ur recipe it makes them delicious.. just make sure you cook them until they are golden brown and you will be fine!

It can be the baking soda, however, there are many reasons why your cookies may be turning out this way. Higher than normal humidity while mixing, not preheating the oven fully, using margarine, using self-rising flour, and even mixing too much causing the eggs to become "over-beaten."

Maybe old baking soda. Or your oven may not be getting hot enough and you're not fully baking in the time listed. Try baking a bit longer, or turn up the oven just a little bit.

It could be the recipe is calling for mostly brown sugar.
If you substitute some or all of the brown sugar for white sugar, the cookies will be crisper.

The more white sugar in a cookie recipe, the harder or crisper the cookie will be.

Brown sugar makes soft cookies.

the more fat in the recipe, the crispier the cookie. Add a little extra butter to the recipe next time.

If you want crips cookies, use real butter, not shortening or oil. Make smaller scoops adn bake for less time.

Change up the butter for shorting or mix it up 50-50 until you get what you are looking for.Hope this helps
