Fried Rice with Ham
Serves 4.
3 large eggs, lightly beaten w/ 2 tsp. waer
2 Tbsp vegetable oil, divided
½ tsp. toasted sesame oil
Coarse salt to taste
4 green onions, thinly sliced diagonally (both white and green parts)
4 garlic cloves, minced
5 oz. ham, thinly sliced and chopped (can use cooked chicken, pork, or shrimp as well)
4 cups cold cooked rice
3 Tbsp. rice vinegar
1 cup frozen peas, thawed
In a large nonstick skillet, heat 1 Tbsp. oil, swirling to coat. Beat eggs, with 2 tsp. water and ½ tsp. coarse salt. Cook in skillet, moving cooked eggs aside gently to allow raw eggs to run in their place, about 2 minutes. Transfer to plate; when cool enough to handle, cut into strips.
In same skillet, heat remaining Tbsp. vegetable oil and sesame oil. Add garlic and scallions, heat and stir until fragrant, about 1 minute. Add ham and rice, season with salt, and cook until very hot, stirring often, about 5 minutes. Add vinegar, peas, and eggs, cook until very hot, about 2 minutes.

Try putting a little bit of all the ingredients offered here: ham, chopped green onions (about 3), a can of peas and carrots, soy sauce and a package of fried rice seasoning. Add the cooked rice, eggs and fold. Sprinkle with sesame oil and put some chopped lettuce on top. Serve inmediately. Enjoy! (If you like Panda Express you'll like this)

Fried Rice:
25 min 5 min prep
4 servings
1 tablespoon butter or margarine
2 eggs, beaten
1 tablespoon butter or margarine
1/4 cup chopped onions
1/4 cup chopped green peppers (optional)
2 cups rice, prepared and cooled
1/2 cup cooked pork (optional) or shrimp (optional) or chickens (optional)
1/4 cup soy sauce
1/2 cup cooked peas (optional)
1. Melt 1 tablespoon butter in skillet or wok.
2. Scramble eggs in butter, breaking up the cooked eggs into small pieces.
3. Set aside.
4. Melt 1 tablespoon butter in skillet or wok.
5. Saute onions and/or green peppers in butter for 3 minutes.
6. Combine eggs, onions, rice, and meat.
7. Stir in soy sauce until color of rice is uniform.
8. Stir in peas.
9. Heat only until warm.

2 tb. Peanut or canola oil
1 can Sliced water chestnuts
1 cup Frozen peas
Cooked chicken or ham (optional)
Preparation
Beat and scramble eggs. Chop and set aside. Pour oil in wok, turn on medium high and add rice. Stir-fry with soy sauce. Add frozen peas, chopped cooked meat (optional), water chestnuts, and cooked egg during last few minutes of heating.

Here's my recipie...
Cook 2 cups of rice, and set aside.
Mix a couple eggs with a teaspoon of soy sauce and fry until cooked then set aside.
Chop and fry onion in frying pan in a little bit of olive oil. Add 2 cups of mixed frozen veggies.
Add the rice and egg and mix well. Turn the temperature from medium down to about 3 at this point or it will stick.
Add about half a cup of soy sauce mixed with about 1/3 water. Now add a few splashes of sesame oil. Mix well taste and add more soy or water as needed.
Serve and enjoy.

Almond Fried Rice
Ingredients:
2 tablespoons vegetable oil
3/4 cup thinly sliced green onions and tops
1/2 cup diced red bell pepper
1 egg, beaten
3 cups cold cooked rice
1/2 cup diced cooked ham
2 tablespoons Kikkoman Soy Sauce
1/2 cup slivered blanched almonds, toasted
Directions:
Heat oil in hot wok or large skillet over medium-high heat. Add green onions and bell pepper; stir-fry 1 minute. Add egg and scramble. Stir in rice and cook until heated through, gently separating grains. Add ham and soy sauce; cook and stir until mixture is well blended. Just before serving, stir in almonds. Makes 4 servings.

Caribean Fried Rice
Ingredients:
1/2 teaspoon sesame oil
1/4 cup diced red bell pepper
1/4 cup sliced mushrooms
2 tablespoons thawed frozen peas
2 tablespoons diced red onion
2 tablespoons diced pineapple
1 tablespoon chopped cilantro
3 1/2 cs. cooked brown rice
1/4 cup low-salt chicken broth
1/4 cup low-sodium soy sauce
Directions:
In a large nonstick skillet, over medium high heat, heat sesame oil until hot. Add bell pepper, mushrooms, peas, onion, pineapple and cilantro. Saute 5 minutes, stirring occasionally, until onion is translucent.
Stir in rice, chicken broth and soy sauce; reduce heat to medium. Cook 3 to 5 minutes longer, or until all liquid is evaporated, stirring often, Serve hot. Makes 6 servings.
