quesadillas. Just get a corn of flour tortilla.
Spray a pan, put the tortilla in the pan at medium heat.
Put a combination of cheese, black beans, refried beans, chicken, steak, peppers, mushrooms, onions, etc.
Cover it with the another tortilla.
Press down
After a couple minutes check the bottom to see if it is golden brown and lift the top tortilla to make sure the cheese has melted
Flip it to brown the other side
Then slice it like a pizza and serve with lettuce, salsa, sour cream or black olives.
Done - writing this probably took longer than it actually takes to make one.

I cook some Macaroni & Cheese add a can of chili and some cooked hamburger with taco seasoning kids love it or instead of the hamburger cut up hot dogs into it. This is requested a lot at my house and it doesn't take long at all. If I am really pressed for time though it's Frozen potatoes o'brein & scrambled eggs. My kids love both ten minutes tops to cook! :)

I noticed you didn't say it had to be particularly healthy. I have two ideas that involve ramen noodles.
Add a couple of drops of green food color ro the noodles so they look like seaweed. Take a hot dog and cut "legs" on it to resemble an octopus. You can paint a face with mustard. My 10 year old niece still loves this.
The second is to take the ramen seasoning and use it when browning some ground beef. Mix the beef with the cooked noodles. For both of these you have to drain the water off the noodles..some people don't.

This is a great one with leftovers!! I have used shredded chicken and cheese, cut up meatloaf and cheese, Meatballs spag. sauce (ragu) and cheese, manwhich..LOTS of versatility with this one...Anyways,
Take a bis quit roll from the fridge, and flatten each bis quit with your fingers all the way around. Then stuff the bis quit into a greased muffin pan. Add whatever filling you are using, top with cheese...repeat until all bis quits are done. Bake in oven for 15-20 minutes at 375 (depends on bis quit..I like Grands Flaky). They are really good and because of the easiness of them, they are one of my favorite recipes.

Stir fry chicken and couscous. I just cut up chicken into little pieces, stir fry it quickly in a pan and cook some couscous in the microwave, it takes about 5 mins and you can use any seasonings you like. Rice works too but takes a bit longer.

Get flour tortillas, some cheddar or american cheese, and slice the cheese, put it in the tortillas and microwave them for a minute. You can put salsa in them if they like that too. CHEAP and EZ. Little mess too.
