Ah, lucky, lucky...the oppurtinity to GAIN weight. You can eat other things besides fruits and veggies, you just need to make sure you eat a lot of those also. You may also want to eat some carbs to give you some energy, try some chicken pasta, and eat it with a big salad. i have given blood many times, and i always make sure to eat something right before so i dont get dizzy. There's no way you could gain five pounds from Friday to Wednesday so don't worry about the weight. I have given blood for many years and was always told to eat a good breakfast that morning. I'm a coffee hound and never did without it either. I always ate the cookie and drank the juice they offer immediately after my blood was drawn and never had a problem.
I admire you for giving blood. No-one ever knows when they might need a transfusion themselves.

Well, the water will add weight by adding fluid, and you have to remember that when you go to give blood, they weigh you and you're supposed to eat a substantial meal before giving blood, so your meal will give you a couple extra pounds on the scale. If you still want to try to gain weight, eat plenty of carbs and I don't see a reason to avoid caffeine, especially since most caffeinated drinks contain excess calories.

I have a friend who donated at 110 Lbs, she ended up getting dizzy shortly after but other then that she was fine. make sure to eat a good meal before you go, and to take advantage of any juice or food they have. just take it easy the rest of the day.
you should be fine, I've donated a bunch of times with no trouble.

You do not have to restrict your diet prior to donating blood. Just be sure that you are hydrated. If you want to gain weight, that's fine, but 110 should be sufficient to donate.

My most effective enjoy is with United Blood Services in Phoenix, and no, they may not take blood you probably have EVER had homosexual intercourse. Period. This is dull, as the very first thing they do is assess for HIV at the blood taken. Just name them and ask

I drink caffeine before donating. they never ask me about that. they ask about taking aspirin and medication. some of the questions are really personal, but they have to ask. eat lots of carbs to gain weight.
