Grilled Cubano sandwiches
On some good rolls layer good mustard, pickles, sliced smoked pork, thin slices of ham and Swiss or provolone cheese (Havarti or Monterrey jack are good too) and grill on a paninni press, grill, or flat top griddle till brown gooey
serve with good cole slaw, beans, chips - enjoy

I like the BBQ route....
You could also do a pork sheppard's pie.
Heat 2 tblsp each of oil and flour in a skillet until nice and golden.
Add a can of beef, chicken or veggie broth.
Toss is shredded pork and a frozen veggie mix(peas, corn, carrot variety)
Heat through.
Place mixture in a casserole or pie dish and top with mashed potatoes.
Top that with shredded cheese and bake until the cheese is bubbly and melted.
Yummy!

Well, everyone who's already answered is right on.......they should all get 10 points.......I can't think of anything more yummy than using your leftover roast for either pulled pork sandwiches (yum) or Cubanos (super yum) or BBQ Pork Sandwiches (ultimate yummmmmm)......You've got a lot of great suggestions here to go on......At any rate, Enjoy!!!

Cut up a couple of cups of chunks and fix it as though it were a chicken pot pie, only it's called a Plantation Pie. Leave the biscuit top OFF, until the mixture gets very hot and bubbly in the oven, add canned or homemade biscuits to the top of the mixture and cook till the biscuits are done. Yummmm.

Im drooling over some of the suggestions...must have pork sandwich for lunch!!!
Shredded pork and beans on the side...with a shredded pork sandwich, pepper jack cheese, cole slaw, and pickels (with bbq sauce)...
Topped off with a few pints of beer!!!!!!!!!!

Why not shred it, make up some killer homemade BBQ sauce and serve BBQ pork sandwiches on some good Kaiser or onion rolls? Add some homemade coleslaw and yum- what time is dinner?

One of the thiings I likke to do is cut the pork very thin. I mean paper thine or as thin as you can, put it in a crock pot, add a bottle of barbecue sauce, let cook on slow heat for several hours and have BBQ sandwiches.
