Marinade for two days if possible, if not, overnight in the following marinade.
250 ml red wine, 1 tbsp crushed garlic, 4 bay leaves, 1/2tsp thyme or oregano, 6 black peppercorns, 50ml olive oil and 10ml balsamic vinegar. If this is not enough just add more of each of the ingredients.
Treat just like a steak on a hot grill make sure not to overcook as this meat is best when done medium(still pink in the middle).

I used to cook ostrich at the restaurant. I just tenderized a bit with a Jaccard, a sprinkle of kosher salt, and slapped it on the charbroiler(grill). It's pretty darned good.

i dunno...but an ostrich looks like a pretty tough looking bird. i'd probably put him in a crockpot with a can of cream of mushroom soup poured over it and let it cook on low for 8-10 hours with a few veggies thrown in.

Yup, treat it like beef. Ostrich is a very low-fat meat as well, very tasty.
