Ingredients:
1 package imitation crab meat
4 hot dog buns
mayonnaise or salad dressing to taste
green onion to taste
garlic powder to taste
pepper to taste
Shredded lettuce

Directions:

Mash the crab meat in a bowl until loose and flaky. Mix in mayonnaise or salad dressing ( I always use Miracle Whip Ultra Low Fat - I like the tangy flavor), until mixture holds together. You can make it goopier if you want.

Add in chopped green onion or chopped regular onion, sweet onion would also be good. Add spices to taste.

Butter outside of hot dog buns ( flat sided buns work best ) and grill in fry pan until toasted. Low fat version would be to just toast the buns in a toaster oven.

Added shredded lettuce, then crab mixture in each bun. Serve with potato chips, French fries or potato salad...whatever goes.

You can sub surimi (imit crab) for shrimp nicely in these recipes:

Shrimp Salad #1

3 tablespoons kosher salt, plus 1 teaspoon
1 lemon, cut into quarters
4 pounds large shrimp in the shell (16 to 20) shrimp per pound)
2 cups good mayonnaise
1 teaspoon Dijon mustard
2 tablespoons good white wine or white wine vinagar
1 teaspoon freshly ground black pepper
6 tablespoons minced fresh dill
1 cup minced red onion (1 onion)
3 cups minced celery (16 stalks)

Bring 5 quarts of water, 3 tablespoons salt, and the lemon to a boil in a large saucepan. Add half the shrimp and reduce the heat to medium. Cook, uncovered, for only 3 minutes, or until the shrimp are barely cooked through. Remove with a slotted spoon to a bowl of cool water. Bring the water back to a boil and repeat with the remaining shrimp. Let cool, then peel and devein the shrimp.

In a separate bowl, whisk together the mayonnaise, mustard, wine 1 teaspoon salt, the pepper, and dill. Combine with the peeled shrimp. Add the red onion and celery and check the seasonings. Serve, or cover and refrigerate for a few hours.

You can make a quick alfredo and add it to any pasta and then sautee the chopped imitation crab meat in a real butter and garlic until heated then add to your alfredo sauce w/ mushrooms and broccoli and zucchini. (boil all the veggies before adding)
Entire meal should take about 10-15 minutes to make.

Alfredo Sauce
Real Butter
Heavy cream
Parmesean to your taste (For family of 5 I use entire container)
Parsley
salt & white pepper (optional)
Heat through stirring constantly to avoid sticking

Very easy, and great on hot summer days!
Imicrab Sandwiches:

2 slices bread (best if it's sourdough or rye)
cream cheese/nufchatel
imitation crab meat
cucumbers
olives (black or green, your choice)

soften cream cheese either by leaving it out on counter for a bit, or quick nuke in the microwave. Just need it soft enough to spread without tearing the bread.
Spread cream cheese on both slices of bread.
slice cucumbers very thin, and layer on one half of sandwich
slice/peel crab meat into long thin strips, (like you would do with string cheese) and put on other half of sandwich
Chop up olives and sprinkle into sandwich, dash o salt, dash o pepper, then close and eat.
Other good toppings on sandwich: sliced tomatos, sprouts, red peppers...whatever you like.

You can use imitation crab meat in anything that calls for crab. The Louis Kemp kind is the best, I really can't tell the difference.

We mix it in to pasta salad, a green leafy salad or heat it up in a bit of olive oil and serve over rice or pasta. You can use it in egg rolls or spring rolls, or make a simple "Crab" salad and wrap a spoonful up in large lettuce leaves. Mix it in to sauteed garlic, onions and peppers and serve over crusty italian bread.
