Bicycle shops do this in a couple of ways. The first way is to blow compressed air through the end of the grip of through the gap between the grip and the bars. This usually allows the grip to slide off on a cushion of air. This is very effective with an air compressor as most shops have, but may also be done with compressed air cans like those used on computers. it is more difficult though.

Do you really want to keep these grips? If you are changing bars, it might be time for anew set anyway. In this case, just take an exacto knife to the grips and cut them off.

since your taking the old ones off just use a knife of razor blade.. make sure the handle bar is clean, use some alcohol based lube and put the new one's on.. the alcohol will evaporate and the new ones will be stuck like glue..

Another way is to spray WD-40 in there. They will slip right off.
