Alfalfa sprouts are a great snack. You can eat virtually unlimited amounts of them.
As for the balanced diet thing, the food pyramid is a great source of information. Whole grains (whole wheat or rye bread, barley, oatmeal) are the basis, then fruits and vegetables, then protein, and sugar, fats, and oils at the very top--as you can guess from the shape, you eat fewer servings of each group the higher you go.
Check out health food stores, too.
Too bad about the mushrooms, though--a good portabella omelet or fajita is one of the delectables of life, in my opinion!

You can live without mushrooms - if that's the only thing he doesn't eat be happy about it! When I met my boyfriend the only veges he'd eat was sweetcorn! He would eat pitza, but not if he new the sauce contained tomatoes (he was under the notion that they're not real tomatoes, just some kinda factory produced red stuff!). It worrys me cos cancer runs in his family and when he was a kid he was so bad he only ate smash (that bogging fake mashed potatoes) for a year! lol I've added foods to his diet over a v long time, chopping them up really small so he doesn't notice them - when he realises he likes something he starts eating it heaps - it's amazing to see! Just go slow and at his pace, but everyone has some foods they don't like, and I don't ever expect my boyfriend to eat everything, but it's great he's getting better nutrition and can actually eat something other than maccaroni cheese when we go out! A variety of foods is good but disliking one or two is fine, he'll get what he needs from other places. Hope that helps xx

Mushrooms are not a necessary part of a balanced diet. Recent studies have even shown possible negative effects of mushrooms. All mushrooms carry some amount of a carcinogen. As long as you both eat a varied diet of whole grains, legumes, fruits, and vegetables, you will be fine.

Mushrooms do not have any nutritional value so why bother with them.When you say snack which is different to a meal. try fruit,apple banana etc. For a balanced meal you want protein in the shape of meat or fish together with vegetables or salad.Don't over do the puddings or sweet stuff.I am sure that it won't be too difficult to arrange a menu that is both balanced and enjoyable.

There are a few dried mushroom cracker snacks flavoured slightly with salt or garlic that tastes really good. They still contain the goodness of mushroom. If he really still hates it, then perhaps a supplement pill with mushroom extract is the best solution. Because he can never get the original benefits of mushroom in any other food.
