Unmarried. For society women (not royalty) the definition was much the same due to the fact that virginity was one of the most important things. There was no way to know if your child was your heir and lineage was very important. So you needed to have a wife and until you had several heirs to the line, you were not allowed to start your affairs.

As far as a wife of a rabbi or clergy, that would have been common b/c of the belief he was married to the church so therefore his wife would remain pure. I'm sure that is meant more in a spiritual way than a sexual way.

It depends on what historical time period you are referring to. In much of the renaissance and post-renaissance, affairs were quite common for both men and women.

A woman who never married would be assumed to be a virgin no matter how old she became since she never had the pleasures of the marital bed (which would be the definition of virginity). The Virgin Queen was married to her crown and would not marry b/c of the risk to her country at handing the power to a "King". However there are many books about her long time lover.

from what I understand
the Hebrew word that was translated as virgin , meant young maiden
there is another translation which means wife of a Rabi
I guess it is a matter of opinion
