I'm thinking of running for historian of a club at my school. but i'm not entirely sure what they do... so if anyone's ever been one or knows what they would do, that would be GREAT

You keep records of what the organization does during the year. If you have a fund-raiser, you take notes about why and for whose benefit, who participated, how much money was raised and how it was used. If you do a service project, say pick up litter along a highway, again, you take notes about why and how. Too, you take photos of events, such as the investment of new officers, group meetings, people having fun at parties, fund raising, picking up trash, or whatever. As the year goes along, you keep a scrapbook with the events and the photos. These are passed along to the club the following year.
Wouldn't it be interesting to know what your grandparents did in this same club 50 years ago? That's the historian's job. To preserve your present time to become part of the club's history.

A historian is someone who writes history, a written accounting of the past. If events precede recorded history, the term is prehistory. Although "historian" can be used to describe amateur and professional historians alike, it is now often reserved for people whose work is recognized in academia, particularly those who have acquired graduate degrees in the discipline

A historian is an impartial observer/recorder of the events that take place. If you do become one, you cannot be judgemental, or impose your personal views of events, your values, etc., on your account of things as they happen. You have to make sure to get all the facts from all sides regardless of your personal interests or feelings.
