Everything; and for the same reasons you can see a human's face and tell what their heritage is. The size, shape, and placement of the chin, eyes, nose, forehead, jaw, chekbones and other parts of the face tell a scientist where the person came from.

Many characteristics show the origin of the human skull. On an elementary level, only primates have complete eye orbits (that is, the eye is completely surrounded by bones that make a sort of oval shape). Humans, because they are primates, have complete orbits. More information about common ancestors can be seen in the general shape of the skull, and some anthropologists spend their entire career studying the teeth of humans and other related species.

More specifically (but remember these are only generalities) a man tends to have a flat chin while women usually have pointed. Mens tend to be larger.

Caucasions have narrower nasal openings than other groups.

Orientals tend to have skulls that are flatter front to back. Which is also why it is more common for oriental people to be short sighted.
