I love grilled eggplant, don't grill too long or it will get soggy!!!! ;)

I like most veggies on the grill, especially eggplant.
Have you tried the white eggplants? Milder flavor, softer skin. Splash on a little Italian dressing while they're cooking. Enjoy!

I love broiled baby eggplant with a lot of garlic (I live in an apartment - can't grill) , but baby eggplant broiled with garlic and olive oil is delicious

I do like grilled eggplant. brush it with some olive oil, some kosher salt and some pepper and you're set!
