two ways:
1st: insuficient amount of antifreeze in the cooling system (radiator). This water can then freeze and, since water expands when it freezes, you crack the engine.
2nd: adding cold water to an already hot engine will crack the block.
BUT, contaminated coolant is not enough in itself to cause an engine to lock up. A cracked block, also, will not make an engine lock up. The only way to have an engine lock is either from extremely high heat; where the pistons expand to the point they can no longer move up and down in the cylinder OR catostrophic angine failure; connecting rod or crank shaft failure.
contaminated coolant may result from a cracked block, but most often is because of a blown head gasket.

Take apart the engine and look inside for cracks. More often it'll be a cracked or warped head. If someone poured a lot of cold water in an overheated engine, that's one way to crack the head, the block or both. Another way a block can get cracked is when the engine freezes and the coolant expands so much it breaks the metal. The engine "freeze plugs" should protect from that, but they will pop out doing it. Indication of cracks are low compression in a cylinder where the crack is, leaking coolant, very high pressure in the cooling system, leaking oil, emulsion in the radioator, valve cover or both, or you see a crack when you look at the engine.

Most often the cause is due to neglecting the cooling system, allowing the antifreeze become too weak to resist freezing. Water expands 11 times. It doesn't take long to cause serious damage to engine blocks. The expanding water forces against the inside of the water jacket causing a crack. Depending on where the crack is located, it may be welded.

its a Ford...'bound to happen :P seriously though, any mods to the intake? sounds like someone could have driven through flood and submerged the intake causing the engine to intake water and "Hydrolock". crack in engine block could come from numerous things such as, overrevving, running on running on congealed (old) oil or low oil, not changing your coolant at specified intervals, and so on..

Any number of reasons - lack of lubrication (oil), too hot, age, stress, fault in the cast. And once it's cracked, its gone. The muddy water is probably oil in your cooler. Good luck!
