The main problem would have been that he was already getting ill and would have died in office before the end of this next term (he died in 1899).

But, to answer your question, he was already looked on, by his critics, with a great deal of suspicion. He was sometimes referred to as "King George" and people wondered if the USA had gotten itself into the same problems they had had before. It was time for him to go and probably the best thing he did was to stop after two terms, a tradition that was maintained all the way up until Roosevelt screwed it up.

I think the political climate would have undermined him as president in a third term. I also believe Washington knew this and that is why he left office when he did, in combination with the fact that he also knew he was ill and didn't feel he could continue to serve the people with the same vigor he always had.
