You will never know.

If you don't feel totally comfortable giving out your information to a website, just don't do it. Find some websites that are well known and trusted.

a lot depends on the website you are thinking of.
sites like Ebay,Amazon and a few others incorporate a safegaurd system such as Etrust or Verisign which normally Means they're secure and information given is in fact
Encrypted for your protection as well as theirs.
for instance Ebay uses Paypal to do this while other have their own encryption service they use.when in doubt if it does not have a padlock showing on the site in tray check the privacy policy sometimes found in FAQ's.

I bank and pay bills online and have never had a problem
except banking may make you change passwords often

Usually they will say before you check out, or sometimes they have an option to check so they don't give out your information. The little yellow padlock at the bottom right of your screen should be a security check saying it is safe.

Do business with companies you trust.

Same as a store down the street, you have to go on your trust that they won't sell your information.

3rd party to process the credit card payments

so you could check into the place that will process
the card info.
