Midnight on July 21st (when it becomes the 21st, so, midnight between the 20th and 21st), and it's 784 pages for the US hardcover edition. Unconfirmed (I believe) is 608 for the UK hardcover edition. The difference is due to type size, page size and the fact that the US version has chapter pictures. This makes it shorter than Order of the Phoenix but longer than Goblet of Fire, for comparison.
