Milk is good but it can be a bit gross to be drinking milk with spicy food. If you're eating spicy Middle Eastern or Indian food they use yoghurt as a side dish to help counteract the spiciness. And of course steamed rice helps too! JUst like bread it soaks up the oils etc in the chilli, and it also is an important component in many spicy cuisines.

Anything with high fat content would soothe your mouth. Which is why you see a lot of people suggest milk. Just make sure it is whole milk and not skim. Fat has an affinity for the Capsaicin which makes peppers hot. Some popular mouth coolers are yogurt, ice cream, and cheese.

I've also seen a lot of people suggest bread and sugar, but I'm not sure about these...I'll have to try that next time.

Milk as the others have said works well. A spoon full of sugar will also work by destracting the taste buds and nerve reseptors but it is temporary. Eating bread works the best. The oils in the chilis are what makes them spicy the bread will soak up the oil. What every you do don't drink water. The water will just spread the oil around your mouth and make it worse. right, milk contains a protein that binds to the capsaicin (the compound that makes peppers hot) and neutralizes the spiciness;
in fact, it applies to any part of the body that comes in contact with hot peppers (like accidentally rubbing your eyes when you handle hot peppers); I should know because I have been a victim twice;
it does not require a large amount of milk (even just a teaspoonful is enough to douse the fire of hot peppers;
BTW, when you say "spicy", I am assuming hot peppers - because many other spices (such as curry) may be considered as spicy by some people but milk will have no effect because the spiciness is caused by a different compound - not capsaicin;

like the others said, drink milk

better yet, eat a spoonfull of sour cream. It coats the mouth better. The spice is in the oils, thats why water doesn't work cause water and oil don't mix, it just runs across the oils. Milk, or sourcream, has fats in it that breakup the spice!

it has been proven through chemical testing that the best solvent for spicy food is milk. sugar also helps, but not as much as the milk.
from personal experience eat a banana w/milk or put a cold apple or pear on your tongue

Eating something sweet will counteract the spicy. Also, bread, chips, crackers, that sort of thing. Doing this will absorb it. Good Luck!

Drink milk, not water.
The milk molecules help to neutralize the capsacin (hot stuff). Water often makes it worse.
