I am guessing it is "Me gusta me sentarse" but 2 "me's"?

Actually, it's, "Me gusta sentarme." Spanish conjugation can be tricky. The word "Sentarse" means sit, but in a different sense. If you were to say that She likes to sit. You would use "sentarse," like this, "Ella le gusta sentarse." But if you are talking about yourself, use, "-me" at the end of "sentar." (which means just, sit.)

No, you say: "Me gusta sentarme", thats the way to say it when you are expressing an action of your own.
"Sentarse" is used for other people, not you. For example: He likes to sit MEANS - "A él le gusta SENTARSE". The same with she or you.
